I'm not sure why these are called pop-eye pancakes at our house. My kids love them and these were so amazing they needed a picture. I used to be able to make a single batch and that was enough now we make a double batch and inhale every bite.

Brings back memories. I used to make popeye pancakes a lot too. Put a little dutch honey on them and they were yummy. Give up a lot of yummy recipes to eat healthier. Not sure that worked. Love you!
